RIBLJE PLJESKAVICE

Lično nisam veliki ljubitelj ribljih pljeskavica, ali eto jednom godišnje spopadne me želja sa njima. Obično napravim veću količinu, pa šta se ne pojede to zamrznem. Pravim ih godinama, i po mom mišljenju, osim kvaliteta ribe, ključ lepih pljeskavica je mekoća mase koja nije pretvrda, ali ni premekana, negde kao testo za hleb kada se premesi. Meni se najbolje pokazalo pravljenje smese dan unapred, da se sve to lepo sjedini i da griz povuče tečnost, kao i vraćanje loptica ponovo u frižider na sat vremena nakon formiranja. Takođe ništa bez vrelog i dubokog ulja. Do sledećeg leta to će biti sve od mene o ribljim pljeskavicama.



RIBLJE PLJESKAVICE

700g fileta oslića 
1 crni luk
3 šargarepe
2  krompira srednje veličine
veza peršuna
3 jaja
limunov sok
griz, brašno i prezla
so, suvi začin, biber


Sitno seckan crni luk propržiti  kratko na ulju u dubljoj šerpi. Dodati  smrznute ili odleđene filete oslića i uz povremeno dodavanja vode (ukoliko su skroz smrznuti) nastaviti sa dinstanjem. Varjačom sitniti oslić dok se dinsta da se na kraju dobije mrvičasta masa, a sva tečnost ne ispari.  Dodati so, suvi začin i biber. Ostaviti da se ohladi. Ako koristite celu ribu, onda oslića skuvajte, pa kad se ohladi odvojite od kostiju, pa tek onda povežite sa izdinstanim crnim lukom i začinima.




Zasebno skuvati krompir u ljusci i šargarepu, pa ohlađene oljuštiti izgnječiti grubo viljuškom. Spojiti sve sastojke, tj. mlaku ribu, krompir, šargarepu, jaja, peršun, limunov sok, dodavati mešavinu griza, brašna i prezli dok se ne dobije kompaktna masa koja će se i dalje pomalo lepiti za ruke. Staviti u frižider i to najbolje preko noći.



    Ukoliko je potrebno nakon vađenja iz frižidera dodati još malo griza. Formirati veće ćufte, pa ih uvaljati u brašno.


      Ređati na papir za pečenje, pa staviti ponovo u frižider na oko sat vremena. Riba će upiti deo brašna na površini.  Pobrašnjanim rukama spljeskati lopte. Ja sam izvukla oko 22 pljeskavice prečnika oko 6cm, a neposredno pre ubacivanja u ulje možete ih opet umočiti u brašno.
      Pržiti u dubljem vrelom ulju kratko da porumene, pa vaditi na rešetku od rerne koju ste postavili iznad pleha od rerne, da se ocede ili ređati na papirne ubruse.



      FISH BURGERS

      I am not a huge fan of fish burgers, but once a year I get a craving for the fish patties. Years of experience has shown  me that the secret is in  keeping the mixture in the fridge overnight so that the semolina and breadcrumbs can absorb the moisture, and the second round of putting the patties in the fridge just before frying. The consistency is very important, too much flour and they are not soft, so they should not fall apart when delicately handled. Also sizzling oil is a must, so they don't absorb too much.



      700g of fish fillets
      1 onion diced
      2 potatoes cooked
      3 carrots cooked
      3 eggs
      handful of chopped parsley
      lemon juice
      salt, pepper
      semolina, flour, bread crumbs


      In a deep pan fry cubed onion for a minute on oil (generous amount since the fish will be dropped in). Add the fish fillets (no need to defrost) and keep adding water a bit by bit to saute the fish while constantly cutting the fish into smaller pieces. Add salt and cook until the fish is white, the water has evaporated and it looks like it has come out of the food processor. Cool completely and add the potatoes and carrots that have been roughly mashed. Add the eggs, parsley, lemon juice, salt and a mixture of semolina, breadcrumbs and flour enough to get a nice consistency that only lightly sticks to fingers. Place in the fridge overnight. The next day forma balls with hands and roll each one in flour. The balls will still be very delicate but will not fall apart. Place on baking paper and put back in he fridge for an hour. Heat the skillet with a generous amount of oil and again roll the balls in flour and lightly flatten with hands. Fry until golden.

      9. jučer mi iz nekog razloga nije prihvatilo komentar... ugl.ja baš i ne volim ribu i rijetko bilo što napravim, pljeskavice nisam radila no kako sam u posljednje vrijeme naišla na više mjesta počele su me privlačiti tako da će vjerojatno i kod bene skoro da budu
