KORE
500–550 g mekog brašna
200 g šećera u prahu

1 kašika praška za pecivo
Puter otopite na laganoj vatri i ostavite da se blago prohladi. U posebnoj činiji pomešajte brašno sa praškom za pecivo i šećerom u prahu, zatim dodajte otopljeni puter, blago umućena jaja i med. Umestite testo i oblikujte u loptu. Testo će biti mekano ali nemojte dodavati previše brašna, ni u kom slučaju više od 550 g. Ostavite ga da odmori oko pola sata u hladnoj prostoriji.
U međuvremenu pripremite dva pleha od rerne. Zagrejte rernu na 180 stepeni. Isecite dva papira za pečenje, dimenzija dna pleha (31 × 36 cm).
Testo podelite na dva jednaka dela. Od njega se peku dve kore: prva se peče prazna i potom premazuje belim filom, dok se druga, još nepečena, premazuje filom od oraha i tek tada peče.
Na papiru za pečenje oklagijom razvucite prvi deo testa na debljinu od nekoliko milimetara. Stavite da se peče na 180 stepeni, u donjoj polovini rerne, 12–16 minuta, dok blago ne porumeni. Pečenu koru ostavite da se ohladi u plehu.
Dok se prva kora peče, razvucite drugi deo testa na papiru za pečenje i stavite ga u drugi pleh. Pripremite fil od oraha kojim ćete premazati ovu nepečenu koru.
FIL OD ORAHA ZA NEPEČENU KORU
300 g grubo seckanih oraha
90 g kristal-šećera
2 pune kašike meda
120 g putera
Na umerenoj vatri karamelizujte kristal-šećer. Kada dobije lepu boju karamele, sklonite sa vatre, dodajte med i orahe, pa dobro promešajte. Zatim dodajte puter i mešajte dok se potpuno ne otopi i sjedini sa smesom.
Brzim i sigurnim pokretima nanesite fil od oraha na nepečenu koru i odmah je stavite u rernu da se peče na 180 stepeni. Nakon desetak minuta pečenja već počnite da proveravate stanje u rerni. Kada šećer počne da peni i da se formiraju mehurići, kolač je gotovo pečen. Pečenu koru sa orasima ostavite da se ohladi, a u međuvremenu pripremite beli fil.
BELI FIL ZA PEČENU KORU
250 g putera, sobne temperature
100 g šećera u prahu
1 žumance
sok od 2 limuna
Mikserom umutite puter sa šećerom u prahu, sokom od limuna i žumancetom, oko 5 minuta, dok ne dobijete svetao i kremast fil. Ohlađenu, pečenu koru ravnomerno premažite belim filom.
SLAGANJE
Pažljivo podignite koru sa belim filom zajedno sa papirom za pečenje i spustite je preko kore sa orasima koja se nalazi u plehu. Vodite računa da se ivice savršeno poklope, jer nakon spuštanja nema pomeranja. Preko papira za pečenje stavite poslužavnik, a na njega neki teži predmet kako bi se kolač ravnomerno pritisnuo. Ostavite da stoji oko 30 minuta.
Kolač se može odmah seći na trouglove dimenzija približno 7 × 5 cm. Pre služenja pospite prah-šećerom.
Ako želite da izbegnete upotrebu svežeg žumanceta u filu, možete ga izostaviti, ali imajte u vidu da će se puter i limun teže sjediniti i da se fil neće razmazivati potpuno ravnomerno. Ovaj kolač vremenom postaje sve bolji.
Prve dve fotografije u poslednjem redu prikazuju postupak sa pečenom korom na koju se nanosi beli fil, dok se sve ostale odnose na nepečenu koru na koju se nanose karamelizovani orasi, nakon čega se kora zajedno sa filom peče.
HONEY AND WALNUT TRIANGLES
DOUGH
500 g flour
200 g fine sugar
200 g butter
2 eggs
2 heaping tablespoons honey
1 tablespoon baking powder
WALNUT FILLING
300 g roughly chopped walnuts
90 g granulated sugar
2 tablespoons honey
120 g butter
CREAM FILLING
250 g butter, at room temperature
100 g fine sugar
juice of 2 lemons
1 egg yolk
Mix the flour, baking powder, and sugar. Add the melted butter, eggs lightly beaten with a fork, and honey. Knead the dough until smooth and form it into a ball. Let it rest for 30 minutes in a cool place.
Line two oven trays (31 × 36 cm) with baking paper cut to size. If the paper is slightly larger or smaller, it does not matter. If you have only one tray, the second layer will simply have to wait.
Divide the dough into two equal parts. Roll out one part on the baking paper to match the size of the tray. If the dough does not fully cover the edges, trim a little from where it overhangs and patch the uncovered areas. The dough should be very thin, about 2–3 mm. Bake at 180°C for 12–16 minutes, until lightly golden. Remove from the oven and allow to cool in the tray. If you need the tray to bake again, just lift it out together with the baking paper and place it on a flat surface. As it cools, the layer will become firm and board-like—this is exactly as it should be.
Roll out the second piece of dough in the same way, but do not bake it. This layer will be topped with the walnut filling.
To prepare the walnut filling, caramelize the sugar over moderate heat. Add the honey, walnuts, and butter, stirring vigorously. As soon as the butter melts, quickly spread the mixture over the unbaked dough. Bake at 180°C until bubbling and caramelized, then remove from the oven and allow to cool completely.
Meanwhile, prepare the cream filling. Beat the room-temperature butter with the sugar, lemon juice, and egg yolk using an electric mixer for about 5 minutes, until smooth and creamy. Spread the cream evenly over the baked plain layer.
ASSEMBLY
Carefully lift the cream-covered layer and invert it onto the walnut layer. Align it precisely before placing it down, as once it sticks, it cannot be repositioned. Place an empty tray over the cake and weigh it down with something heavy to press the layers together. Let it rest, then remove the baking paper.
Cut into rectangles approximately 7 × 5 cm and slice diagonally to form triangles, or cut into 7 × 7 cm squares. Dust with fine sugar before serving.
These pastries keep beautifully in the refrigerator and improve in flavor and texture with time.
