AVGOLEMONO SUPA by Cooketa

Debela, mlada i definitivno sočna." Umesto peršuna  dodala sam mirođiju i povećala  količinu jaja. Hvala Selma na još jednom odličnom receptu!

AVGOLEMONO SUPA

1 crni luk sitno seckan
3 šargarepe- kolutovi ili kockice
1 čaša seckanih stabljika celera
manji koren celera (1/4 malih kockica, ostalo u komadu)
200g belog mesa- kuvanog i cepkanog (sačuvati vodu u kojoj se kuvalo)
100g orza (ječma) ili pirinča
kocka za supu i so
sok od jednog limuna
3 jaja
mirođija
voda

Na malo ulja kratko propržiti luk. Dodati svo povrće, piletinu i naliti vodom, oko 1,5l. Pustiti da proključa, pa dodati pirinač. Kuvati dok pirinač nije gotov, a povrće kuvano.

AVGOLEMONO SOUP

A fellow blogger Cooketa made this wonderful Greek soup and presented it in a fantastic post about Greek cooking. Creamy, silky, light, with a hint of summer in a spoon, refreshing and incredibly rich, this soup is a gem amongst soups. To quote Selma "To prepare this rich soup as it was meant to be prepared, you will need a chicken whose origin you are familiar with or you know the person who is selling it to you (who will clean it up for you)". I am talking about an old chicken that runs free on a farm and has an abundant diet of corn and wheat. In a case that you are not able to get your hands on such a creature, as I was, you are left with a store bought chicken. Fat, young and juicy." I felt free to change the recipe a bit, since my chicken was in the freezer in a shape of cleaned white meat. I wanted to try the version with orzo, but I could not find it in Belgrade in stores, so I used rice, as Selma recommended.Instead of parsley, I added dill and I increased the amount of eggs in the soup. Thank you Selma for another great recipe!

1 onion diced
3 carrots sliced or diced
1 cup of celery stalks cut
1 cup of celery root diced
200g of boiled white meat shredded (save the stock)
100g of orzo or rice
stock cubes
salt
juice of one lemon
3 whole eggs
dill
1.5l of water

In a large pot on couple of tablespoons of oil fry the onion. Add the vegetables, cooked chicken and water. Bring to a boil and add orzo or rice. Cook until the rice or orzo are done. It takes about the same times for them and the veggies to cook. In a bowl lightly beat the eggs and lemon juice with a fork. Add a cup of warm soup to the mixture to temper the eggs, so you won't get egg drop soup. Take the soup of the stove and pour in the eggs. Put back on the stove and cook for a bit more to thicken it. Sprinkle with dill.

AMERIČKA PITA OD LIMUNA

AMERIČKA PITA OD LIMUNA

Kalup za tart prečnika 25 cm i dubine 3,5 cm
(mereno sa unutrašnje strane)

KORA

250 g brašna
125 g hladnog putera, isečenog na listiće
prstohvat soli
5 kašika kristal šećera
4–7 kašika hladne vode

FIL

250 g kristal šećera
100 g gustina (skrobnog brašna)
rendana kora od 4 srednja limuna
180–200 ml sveže ceđenog limunovog soka
600 ml vode
4 žumanca

ŠAM

6 belanaca
200 g kristal-šećera

KORA

U činiji sjedinite brašno, so i šećer, a zatim prstima utrljajte hladne listiće putera dok smesa ne postane nalik krupnim mrvicama.

FIL

U dubljem loncu sjedinite šećer, gustin, rendanu koru limuna i vodu.

    LEMON MERINGUE PIE

    PIE CRUST
    250 g flour
    125 g cold butter
    A pinch of salt
    5 tablespoons caster sugar
A couple of tablespoons of ice-cold water

    FILLING
    250 g caster sugar
    100 g cornstarch
    Zest of 4 lemons
    600 ml water
180–200 ml lemon juice (approx. 4 lemons)
    4 egg yolks

    MERINGUE
    6 egg whites
    200 g caster sugar

Mix the flour, salt, sugar, and cold butter slices by hand or in a food processor until the mixture resembles coarse crumbs. Transfer to a bowl (if using a processor) and add the ice-cold water, tablespoon by tablespoon, until the dough comes together into a ball. Place the dough in a plastic bag and refrigerate for one hour.

Roll out the dough between two sheets of baking paper. Transfer it to your pie pan and gently press it into the base and around the edges. Fill any gaps with excess dough. Prick the base with a fork and bake at 180°C for about 14 minutes.

In a deep saucepan, combine the sugar, cornstarch, and lemon zest. Add the water and cook over medium heat, stirring constantly, until the mixture thickens. Remove from the heat and add the egg yolks and lemon juice. Return to the stove and cook for another minute or two, stirring continuously, until thickened again. Pour the hot filling over the baked crust.

Beat the egg whites, gradually adding the sugar, until stiff peaks form (about 5 minutes). Spoon the meringue over the hot filling. Bake at 160°C until the peaks turn golden.

Allow the pie to cool completely, then refrigerate. Serve the following day, slicing with a knife dipped in cold water.

    TROUGLOVI OD MEDA

    TROUGLOVI OD ORAHA I MEDA

    KORE

    500–550 g mekog brašna
    200 g šećera u prahu
    200 g putera
    2 jaja

Umestite testo i oblikujte u loptu.

    HONEY AND WALNUT TRIANGLES

    DOUGH

    500 g flour
    200 g fine sugar
    200 g butter
    2 eggs
    2 heaping tablespoons honey
    1 tablespoon baking powder

    WALNUT FILLING

    300 g roughly chopped walnuts
    90 g granulated sugar
    2 tablespoons honey
    120 g butter

    CREAM FILLING

250 g butter, at room temperature
    100 g fine sugar
    juice of 2 lemons
    1 egg yolk

Mix the flour, baking powder, and sugar. Add the melted butter, eggs lightly beaten with a fork, and honey. Knead the dough until smooth and form it into a ball. Let it rest for 30 minutes in a cool place.

Line two oven trays (31 × 36 cm) with baking paper cut to size. If the paper is slightly larger or smaller, it does not matter. If you have only one tray, the second layer will simply have to wait.

Divide the dough into two equal parts. Roll out one part on the baking paper to match the size of the tray. If the dough does not fully cover the edges, trim a little from where it overhangs and patch the uncovered areas. The dough should be very thin, about 2–3 mm. Bake at 180°C for 12–16 minutes, until lightly golden. Remove from the oven and allow to cool in the tray. If you need the tray to bake again, just lift it out together with the baking paper and place it on a flat surface. As it cools, the layer will become firm and board-like—this is exactly as it should be.

Roll out the second piece of dough in the same way, but do not bake it. This layer will be topped with the walnut filling.

To prepare the walnut filling, caramelize the sugar over moderate heat. Add the honey, walnuts, and butter, stirring vigorously. As soon as the butter melts, quickly spread the mixture over the unbaked dough. Bake at 180°C until bubbling and caramelized, then remove from the oven and allow to cool completely.

Meanwhile, prepare the cream filling. Beat the room-temperature butter with the sugar, lemon juice, and egg yolk using an electric mixer for about 5 minutes, until smooth and creamy. Spread the cream evenly over the baked plain layer.

    ASSEMBLY

Carefully lift the cream-covered layer and invert it onto the walnut layer. Align it precisely before placing it down, as once it sticks, it cannot be repositioned. Place an empty tray over the cake and weigh it down with something heavy to press the layers together. Let it rest, then remove the baking paper.

Cut into rectangles approximately 7 × 5 cm and slice diagonally to form triangles, or cut into 7 × 7 cm squares. Dust with fine sugar before serving.

These pastries keep beautifully in the refrigerator and improve in flavor and texture with time.
