ŠKOLJKICE SA KREM PILETINOM (u aromatičnom crvenom testu)
recept objavljen u magazinu MEZZE, decembar 2013. (strana 24 i 25)
količina za 36 školjkica, modlica 8,5cm, 2 pleha od rerne

FIL
120g kuvanog belog mesa
1 krompir, (očišćen oko 150g)
1 šargarepa, (očišćena oko 100g)
80g praziluka, kockice ili tanki krugovi
3 kašike ulja
1/2 kašičice soli i bibera po ukusu
1/2 kašičice suvog bosiljka
1/2 kašičice suve majčine dušice
oko 100g krem maslac - sir (Vajkrem, Philadelphia, mlečni namaz)

Propržite praziluk na ulju, sipajte malo vode i pržite dok voda ne ispari, pa ga izvadite i ostavite da se ohladi. Zajedno skuvajte belo meso, oljušteni krompir i šargarepu.Iseckajte, tj. više iscepkajte končasto, toplo kuvano belo meso. Hladnu kuvanu šargarepu izgnječite poleđinom viljuške, a krompir grubo usitnite nožem. Pomešajte praziluk, piletinu, krompir i šargarepu. Posolite, pobiberite po ukusu, dodajte bosiljak i majčinu dušicu. Umešajte Vajkrem. Dosolite po ukusu. Stavite fil u frižider dok ne napravite testo.

TESTO 
500g mekog brašna
2 kašičice slatke aleve paprike
1 puna kašičica soli
1 kašičica suvog bosiljka
1 kašičica suve majčine dušice
1 kašičica suvog ruzmarina
125g listića hladnog putera ili margarina
1/2 kašičice belog vinskog sirćeta
oko 150-170ml ledene vode

PREMAZIVANJE
1 jaje i 1 kašika hladne vode

Pomešajte suve sastojke za testo. Utrljajte listiće hladnog putera u u brašnjastu smesu. Dodajte sirće i polako sipajte hladnu vodu onoliko koliko je potrebno da se testo poveže. Stavite testo u kesu, malo ga spljoštite  i odložite u frižider na 30-ak minuta.

Rastanjite testo oklagijom na par milimetara debljine. Donjom stranom modlice za školjkice prečnika 8,5cm, čašom ili modlicom slične veličine izvadite krugove. Stavite disk testa u modlicu, napunite filom, nešto manje od jedne kašičice, i pri zatvaranju modlice gurnite fil ka unutra. Nožem odstranite višak testa.

Ređajte školjkice u pleh od rerne obložen papirom za pečenje. Izbockajte svaku viljuškom na par mesta. Umutite jaje i kašiku hladne vode i time ih premažite. Premesite reslove testa i nastavite sa radom dok sve ne utrošite.

Pecite na 180stepeni (bez fena) oko 20 minuta. Tokom pečenja neke se otvore (to ne utiče na ukus).





SAVORY SEASHELL MINI CREAMY CHICKEN PIES
makes 36 mini pies, dumpling press mold 8.5cm diameter 

FILLING
120g cooked chicken breast
1  medium potato, peeled around 150g
1 carrot, peeled around 100g
80g leek, finely sliced
3 tablespoons of oil
1/2 teaspoon of salt and pepper, each
1/2 teaspoon of dry basil and thyme, each
100g of cream cheese

Fry the leek on oil until it softens. Take out of the pan and let it cool. Cook the carrot, potato and chicken breast. Finely slice, shread the chicken. Roughly the potato with a knife and mash the carrot with the back of the fork. Mix them up into the fried leek. Add salt, pepper, thyme and basil. Stir in the cream cheese. Salt to taste. Place in teh fridge. Can be made a day ahead.

DOUGH
500g flour
2 teaspoons of ground sweet paprika
1 teaspoon of salt
1 teaspoon of dry basil
1 teaspoon of dry thyme
1 teaspoon of dry rosemary
125g cold butter
1/2 teaspoon of white vinegar
150-170ml of ice cold water

GLAZE
1 egg and 1 tablespoon of cold water

Mix all of the dry ingredients for the dough in a food processor or in a bowl. Add in slices of cold butter and knead it in or just pulse in a processor. Add in the vinegar and water so the pastry just comes together. Wrap in plastic foil and refrigerate for 30 miinutes. 

Roll out the dough very thin, couple of milimeters. Cut out the circles with the back of the dumpling mold or with a round cutter thet is 8.5cm in diameter. Place a circle of dough into a mold. Place a teaspoon of the filling in the middle and press to make a dumpling. Remove the excess dough. Place the mini pies in an oven tray lined with baking paper. Knead the rest of the dough. Roll it out again and continue until all of it is used up. Makes 2 trays. Glaze with the egg wash (egg and cold water). Bake at 180 degrees Celsius (no fan) for around 20 minutes.
