PEKARSKE ROL KIFLE I ROL VIRŠLE

Caka ovih divnih pekarskih kifli i rol viršli leži u mekanom centru, jer se prazna kifla ili viršle motaju u testu koje je nejednako razvučeno. Testo ima svoj deblji kraj koji se ostavi kao takav, a ostatak se razvuče, pa se onda mota oko tog debeljuškastog dela. Zaista jedan lagan recept, gde nema čekanja na dizanje testa, već se sve odmah radi.




Umesto viršli možete koristiti i druge filove ili ih ostaviti da budu prazne. One prazne imaju specijalnu aromu kada su posute kombinacijom morske soli i kima. Možda su one i najlepše, ali ove sa viršlama vam daju kompletan obrok, ne baš najzdraviji, ali prilično zasitan. Pečene možete slobodno zamrznuti.

TESTO
60g svežeg kvasca
prstohvat šećera i prstohvat brašna u 100 ml tople vode
250ml mlakog mleka
250ml ulja
150ml mlake vode
1 kg brašna
2 kašičice soli

po želji 16 viršli 

PREMAZ
1 jaje i 2 kašike vode

Staviti kvasac u toplu vodu sa prstohvatom šećera i brašna i ostaviti ga na toplom mestu u šoljici da nadođe. 

U velikoj šerpi sipati 700g brašna i so, pa dodati nadošli kvasac, ulje, mleko i još 150ml vode; zamesiti testo uz postepeno dodavanje ostatka brašna. Testo treba da je meko i da se ne lepi za ruke, a nije ga potrebno mesiti kao za hleb, već samo lagano formirati. Testo se izuzetno lako radi, jer je uljano i nije potrebno dodavati još brašna. Ovo su tačne mere, gore dole 50g.

Testo, bez čekanja da naraste, odmah formirati u oblik valjka, pa ga podeliti nožem na 16 jednakih delova. Od svakog dela formirati jufkicu, malo ih spljoštiti rukom u krug, pa ih rastanjiti oklagijom, ali ostaviti početni deo jufkice od oko 2cm onako debeljuškast, a ostatak jufkice istanjiti; taj debeljuškasti deo će biti centar kifle, a ostatak tanjite što tanje samo je bitno da viršla koja ide uz debeljuškasti deo ne štrči mnogo. Staviti viršlu do debeljuškastog dela i urolati je, pa ih odmah složiti u pleh od rerne koji ste obložili papirom za pečenje, a ukoliko ne stavljate viršle, samo urolajte kiflu počevši od debeljuškastog dela.

Premazati ih jajetom koje ste blago umutili sa 2 kašike vode, a za one prazne koristiti kim i morsku so u kombinaciji, susamom...Odmah peći, bez čekanja da narastu, na 210 stepeni (bez fena) oko 15 do 20 minuta, pa smanjiti na 160 stepeni i peći još 10 do 15 minuta.



HOT DOGS IN A BUN

These easy to make hot dog rolls are a perfect meal all in one. Not too healthy, but very satisfying. I love the ones without hot dogs, the empty ones, but sprinkled with cumin and sea salt. Those are my favorite ones. There is no waiting for the dough to rise, in any step, so you can make them very quickly. I freeze mine, and defrost in the microwave, since we can not eat all of them at once.

60g of fresh yeast in 100ml of warm water
pinch of sugar and a pinch of flour
250ml of warm milk
250ml of oil
150ml of warm water
1 kg of flour
2 teaspoons of salt
16 hot dogs

GLAZE
1 egg and 2 tablespoons of cold water
sea salt and caraway
sesame seeds

Place the yeast in 100ml of warm water and add a pinch of sugar and flour. Let the yeast bubble up for 20 minutes in a glass. In a large pot add 700g of flour, salt, bubbled up yeast, oil, milk and 150ml of water and mix together. Add the remaining flour and knead for couple of minutes just enough for the dough to come together. The dough should be soft, not sticky, but oily.

Without waiting right away form a roll out of the dough and cut into 16 equal pieces. With the palm of your hand flatten each piece into a circle lightly, and with a rolling pin starting 2 cm from the edge roll out the dough thin. The diameter should be as long as your hot dog is, around 12cm. Place the hot dog next to the part that you have not rolled, like in a picture and start rolling. Place the rolls on the oven pan that you have lined with baking paper, and glaze all with the mixture of the lightly beaten egg with water. The empty ones are best when sprinkled with cumin and sea salt, and the ones with hot dogs you can sprinkle with sesame seeds over the glaze or just leave them with the egg wash.

Bake them at 210 degrees Celsius (no fan) around 15 to 20 minutes, then turn down the oven to 160 and bake for an additional 10 to 15 minutes
