I make my pastries a little different and this method never fails. As you can see I use metric measurements which are much more precise so I used around 600g of flour. If 150g of flour are in one cup I used 4 cups of flour but that depends if the flour is sifted or packed. Every time you work with yeast and flour just add a bit of water in the beginning as stated and the recipe. Then place half of the amount of flour in the recipe and all the liquids and other ingredients, mix into a sticky liquid and then add in the rest of the flour as much as you need. It c...I actually had trouble with the Simit recipe. It called for 1c water (in addition to the 1/4 used to mix the yeast). But that was not enough for my flour. I think I used at least 2c. Could be the type of flour that they used in the original recipe. They came out great in the end.
